Avocado Corn Salad

Avocado Salad

Avocado corn salad is a bright and feel-good salad that’s loaded with great benefits. 

Ingredients:

1 lb of cherry tomatoes halved or diced

3 ears of corn cooked, shucked, and cut off the cob

avocados peeled, pitted, and sliced

1/2 of red onions thinly sliced

1/4 cup of cilantro chopped

2 tablespoons of extra virgin olive oil

2 to 3 tablespoons of lime juice 

garlic cloves minced

1 teaspoon of sea salt or 3/4 of table salt

1/8 teaspoon of black pepper

1 – 2 tablespoon Badia Complete Seasoning

 

 

 

Instructions:

In a large salad bowl, combine tomatoes, corn, avocado, red onion, cilantro, and garlic. After all ingredients are combined, drizzle the top with 2-3 tablespoons of extra virgin olive oil and  2-3 tablespoons of lime juice. Add 1 teaspoon of sea salt and 1/8 teaspoon of black pepper, or season for flavor.

Toss the salad gently just until combined and then serve!
